Second, the seasoning kelp will contain 20% or less of the light-dried grade 1 to 2 kelp, after removal of debris, immersed in 2% acetic acid for 15 seconds to 20 seconds. Remove and place for 6 to 8 hours to soften the kelp and remove the smell. Then cut into strips 2 mm to 3 mm wide and 8 cm to 10 cm long. Add 3% to 4% salt water for 1 minute to control the water content to 20%. The prepared seasoning (sugar 45%, vinegar 6%, salt 4%, ginger juice 3%, monosodium glutamate 0.5%, allspice 1.5%, cold boiled water 40%) was soaked for 2 hours to 4 hours and then heated and cooked. If a steam double boiler is used, it is heated with 2 kg of steam per square centimeter for 20 minutes and then heated with 0.2 kg of pressure steam for 60 minutes. When the liquid sugar content reached 38 degrees when the pan, hot as required by the weight of the packaging, the soup accounted for 10% to 15%. Vacuum or exhaust packaging can be used. Finally, 100°C boiling water is used for sterilization for 40 minutes and cooled to room temperature.
Third, kelp beans use 10% kelp, soybeans 90%. The light-dried grade 1 to 2 kelp of water content less than 20% was selected and treated with 2% acetic acid water. The shredding and washing steps are the same as those for seasoning kelp. Place the washed kelp in boiling water and cook for 20 minutes. The selected soybeans are soaked in water for 10 to 12 hours. After draining, rinse with water once, place it in a steamer, heat to 110°C for 18 minutes, and macerate for 8 hours with seasoning (ibid.). Soybeans, together with seasoning liquid and kelp, are poured into a double-layer pot and heated for 60 minutes. When the sugar content reaches 55 degrees, the pots are panned, and hot exhaust gas is quantitatively packaged. The soup accounted for 15% to 20%, and was finally sterilized in 100°C hot water for 60 minutes and cooled to room temperature.
Fourth, kelp noodles selected light dry 1 to 2 kelp to remove sediment, cut into 2 cm wide, 8 cm to 12 cm long kelp. The clean water was thoroughly washed, and after the seaweed was swollen, it was ground with a colloid and 2% saline was added. Mix 5% of ground seaweed with 95% flour, and use a mixing machine and noodle making machine in the noodle processing factory to make kelp noodles.
