Salty cabbage recipe. 100 kg of fresh cabbage, 7 kg of salt.
Operation points Raw material finishing. First, arrange fresh cabbage, remove yellow leaves and old leaves, cut roots, wash away sediment, and dry them for use.
Marinated. The adjusted cabbage is tiled in the tank, with the leaves facing upwards, the vegetable root facing downwards, paving a layer of vegetables, spreading a layer of salt, and stepping on it, until the leaves are slightly softer. However, it should not be too heavy when stepping on it so as not to crush it. The top is covered with straw bales, covered with bamboo pieces, and pressed with stones on the bamboo pieces. After 10 days, the cabbage is served.
Quality Standard This product is a brine-based pickle with a pale yellow color and delicious taste.
Notes The best season for salting cabbage is from late October to December.
Sour cabbage recipe. Bao heart cabbage 100 kg, salt 3 kg.
Operation points Raw material finishing. Pick cabbage leaves with white and tender leaves and a solid Baotou cabbage. Cut cabbage roots and leaves. Take no more than one kilogram (more than one kilogram of vegetables should be cut open).
Hot burn. After the cabbage is washed, hold the tip of the leaf by hand, put the stem into the boiling water in the pot, and then slowly enlarge the tip of the leaf to heat the pot for 1 minute.

Precautions It is advisable that residents in the northeastern and north China regions should be made before and after November each year. The south of the Yangtze River is suitable for production from December of that year to January of the following year.
