Cooked shrimp

The raw shrimps were chopped with trash and impurities and rinsed clean. According to local customs, there are three ways to cook shrimp:

1. Salted boiled shrimp: 60-75 kilograms of fresh water per 50 kilograms of raw shrimp, depending on the freshness of raw materials, processing season, and weather conditions, add 8%-10% of salt, up to 15%, and then boil in the pan. Soak in the foam, pour the shrimp, stir 2-3 times, remove and drain after 10-15 minutes.

2. Fresh-water boiled shrimp: There are 70% fresh water in the pot, and the raw shrimp will be poured after boiling. Stir and stir 2-3 times until the shrimp shell is shiny and cooked.

3, seawater boiled shrimp: cook with fresh boiled shrimp. Although seawater is used, cooking without salt is still lighter. Only add 5% to 10% of salt when the weather is cloudy and it is processed into salty dry products.

Dried

According to the specific conditions, they can be cooked on board and immediately poured on the fish net rack or reed curtain to dry, or they can be cooked in the home and poured on the cement floor. When drying, the shrimp should be spread thin and evenly, and need to be turned frequently, to a degree of drying of more than 90%. This type of dried shrimp is called "shrimp embryo."

Shelling

The shrimp embryos are allowed to air dry for a few hours before shelling, so that they can be completely dried. There are many shelling methods. Put the dried shrimp embryo into the bag, 2.5-5 kilograms per bag; hit the bag with the ground, balance it back and forth after playing more than 10 times, so repeatedly 1-2 times, you can wind the wind to remove the fine wind, and then Sieving coarse, medium and fine three. Coarse and then into the bag, for the second impact; in the use of the bar (coarse hemp rope compilation) friction, to complete the shell has not been removed after the windmill over the wind; fine to carry out the second to go. In this way, after several collisions, winds, and sieves, they are fully shelled, and then selected, impurities are removed, shrimp shrimp (shrimp brain, shrimp mouth, shrimp tendon, etc.) are picked, and finally, large, medium, and small, etc. Can be packaged, stored, listed.
