Once you get the hang of it, you can whip these up quickly for last-minute guests, a spontaneous hike, or a romantic picnic. My favorite part is how customizable the toppings are. Goji berries add chewiness, while rose petals bring a floral touch. I’ve never made this recipe the same way twice! To make this recipe, you’ll need: - A medium-large bowl - Small bowls for toppings - A melon scoop - A food processor - A double boiler - Toothpicks - Parchment paper - A spoon or spatula **Optional Toppings:** - Organic hemp seeds - Organic unsweetened coconut flakes - Minced organic cornflowers - Chopped pumpkin seeds - Organic goji berries - Minced organic rose petals **Optional Drizzle:** - 1/4 cup organic cacao butter wafers - 1/2 tsp organic matcha powder or 1 tsp organic cranberry powder Here are the ingredients you’ll need: - Juice from 1/2 lemon - 2 cups filtered water - 3 medium organic apples (I prefer slightly tart varieties) - 15 pitted organic dates - 1/2 cup maple syrup - 1 tsp lemon juice - 1 tbsp filtered water - 1 tsp organic mesquite powder - 1 tsp organic maca powder - 1/4 tsp organic vanilla bean powder or extract **Instructions:** 1. Prepare your chosen toppings and set them aside in small bowls. 2. If making a drizzle, melt cacao butter in a double boiler and mix in matcha or cranberry powder. Keep warm on low heat. 3. Line a baking sheet with parchment paper. 4. Squeeze lemon juice into a bowl and add 2 cups of water. 5. Use a melon scooper to create apple bites. 6. Place them in the lemon water immediately to prevent browning. 7. In a food processor, pulse dates until smooth. 8. Add maple syrup, lemon juice, and water. Pulse to combine. 9. While pulsing, add mesquite, maca, and vanilla. Continue until the mixture is gooey like caramel. 10. Test by dipping a spoon into the paste. When it drips smoothly, it’s ready. 11. If too thick, add more maple syrup. 12. Remove apple pieces from the water and pat dry. 13. Insert a toothpick into each piece and dip in caramel. 14. Use a spatula to coat fully. 15. Dip in your chosen topping and place on the parchment. 16. Add optional drizzle if desired. 17.
